Rhubarb Dessert

June seems to be rhubarb season, and I can still smell and taste my Mother’s rhubarb dessert. Every farm lady had her own rhubarb patch, and not to be wasteful, when everyone had enjoyed lots of rhubarb pies, breads, and desserts, most mothers would also make rhubarb sauce. The dessert recipe I am about to share has a mile-high meringue, with a custard filling and wonderful crust. It sounds complicated….but it’s easy and well worth your time and effort. Enjoy!


Rhubarb Torte


½ cup soft butter

3 Tbsp. sugar

1 cup flour

Mix all together and pat in a 9×9 pan. Bake in 350◦ oven for 10 minutes.



2 ½ cups rhubarb, cut up

3 egg yolks

1 cup sugar

4 Tbsp. flour

½ teas. salt and ½ teasp. vanilla

½ cup cream

Mix all together and pour over the partially baked crust. Bake at 350◦ for 40 minutes.



3 egg whites

5 Tbsp. sugar gradually added to egg whites while beating, then add

½ teas. Vanilla

When the whites hold stiff peaks, they are ready to spread onto the warm filling. Brown the meringue in the oven, (about 5-8 minutes) but watch closely.

BUT FIRST:  A Father’s Day tribute to my father, Martin Anderson, now in Heaven, who also would have celebrated a birthday in June:

*How blessed I was to have a father who read the Bible and prayed with us each evening at the dinner table.

*How blessed I was to have a father who protected me in a family of rowdy boys because he thought girls were fragile (which I didn’t like at the time). 

*How blessed I was to have a dad who came to visit me at the hospital in the next town each of the 40 nights I hung between life and death with whooping cough and pneumonia at age four.   And it was Dad who carried me in his arms to my doctor’s appointments each month because I had a heart murmur and rheumatic fever at age ten.  (No wonder he thought girls were fragile.)

What God Means to Me

Whether you’re blessed to be married or you’re single

(still or again…) , God wants to be more than a spouse could ever be to you.

         Here are some of the precious roles I’ve discovered since I lost my husband to cancer.   I’m not really alone!!!

What the triune God means to me

He is my . . .

A      Advocate  1 Jn. 2:1a-2  If anybody does sin, we have one who speaks to the Father in our defense—Jesus Christ, the Righteous One.  He is the atoning sacrifice for our sins…

B      Burdenbearer  Ps. 68:19 Praise be to the Lord, to God our Savior, who daily bears our burdens.

C      Counselor  Jn. 14:16 & 26  And I will ask the Father, and he will give you another Counselor to be with you forever…but the Counselor, the Holy Spirit, whom the Father will send in my name, will teach you all things.

D      Defender  Ps. 27:1  The Lord is my light and my salvation—The Lord is the stronghold of my life—of whom shall I be afraid?

We’ve all got a favorite WEDDING GLITZES story.  In honor of June, the most popular month for weddings, here’s Mary Z‘s favorite:


Love is in the air in June! Statistically speaking, there are more June brides than during any other month of the year. Weddings, no matter the month are usually not without “hitches or glitches,” and if something can go wrong…it usually does on the couple’s most treasured day. I am chagrined to admit this forthcoming escapade, but at the time, the laughs were worth every minute of the evening!

Many years ago when the Mall of America first opened, a girlfriend, Mary Jo, and I decided to stay overnight at the Embassy Suites near the mall and have a shopping weekend. Being nosey and looking for some fun, after dinner one of the evenings, we decided to see what might be going on in the hotel. All dressed up and strolling around, we discovered there were three wedding receptions happening that evening.

We wiggled and giggled our way into each one, checked out the wedding cake at each, and decided the cake looked the best at the last one. We joined the reception, ate cake, and made small talk with those around us. As everyone hit the dance floor, we hit the dance floor, too. It was there that, unfortunately, Mary Jo’s cousin happened to be dancing right next to us!  Somehow Stephen was a distant friend of one of the people in the wedding party!

Surprised, Stephen said, “What are you doing here?”
