A Good Egg


I have eaten eggs that are rubbery and ruined from too much heat.

A good egg needs to be handled delicately. You will savor the texture, flavor, and

fluffiness of these special eggs!


  • 8 to 10 fresh eggs
  • ¼ stick of butter
  • 2 oz. cream cheese
  • ½ pint whipping cream
  • Chives
  • Salt and pepper to taste



  1. Melt the butter in an 11 x 7-inch Pyrex baking pan in a 350 degree oven.
  2. In a medium-sized bowl, beat the eggs lightly, and add salt and pepper.
  3. Add chunks of cream cheese.
  4. Add the cream and chop in some fresh chives.
  5. Pour into the baking Pyrex dish and bake about 10 minutes, then use a rubber 
    spatula to gently turn over the mixture. Repeat this procedure about every 5 to 10 minutes until done.
